Granola Stuffed Waffles

This summer, I visited my sister in the States. It was my first journey overseas and undoubtedly the best three weeks I have ever spent. This trip was a nature lovers' dream journey starting with the national parks Zion & Grand Canyon and ending at Niagara Waterfalls. Along with a beautiful beach trip to Martha's in between, we experienced it all.


The first park we visited, Zion National Park, was truly the most memorable. Since it had the perfect ambiance of a little town, with wilderness right beside it. And not only had I never seen such multifarious colored rocks before, I had never had such delicious pancakes.

My husband and I had an early start that day as we wanted to cover some beautiful trails at Zion and these hearty scrumptious pancakes were exactly the kind of energy boost you'd need for a hiking day.

They were light, fluffy and filled with a delicious homemade granola which had a sweet, spicy aroma of honey and cinnamon. The contrast between the fluffy pancake and the crunchy granola was just perfect.

Step by Step

I wanted to build upon this brilliant contrast, so instead of pancakes, I went for waffles. Since my love for crunchy things is just, that much more. So, follow the arrows on the images below, to quickly fix up a perfect #brunch with this simple step by step recipe.

5 rectangular waffles or one 9-inch round

Useful Notes

  • I used homemade granola, you can also use breakfast muesli or any of your favorite crunchy breakfast cereal. Make sure to use a cereal which stays crunchy longer.

  • Chia seeds or ground flax seeds are used as an egg replacer. If you don't have any of them at hand, you can try using six tablespoons of smoothly mashed banana.

  • You can use any milk in the recipe. I have successfully tried with dairy and soy milk.

  • If you don't have olive oil on hand, you can use canola or any neutral-smell oils.

  • I have used a silicon waffle mould to bake waffles in the oven, feel free to use a waffle iron instead. Just fill up the batter in waffle iron like described above and set the time as per it's instructions.

I devoured these ultimate crunchy waffles with some fresh whipped cream and blueberry coulis. You can also try with maple syrup and some more of granola.
