If you love cinnamon like I do, you'll love this cake to the (cinna)moon and back. LOL! One lazy afternoon as it started to rain, I started craving something warm and cozy. Also, the coffee ice cream in my freezer had been waiting too long for a perfect tea cake to go alongwith.

Useful Notes
I have used molasses to make brown sugar from white sugar. You can use light or dark brown sugar or even regular granulated sugar.
Feel free to lower the amount of sugar by 2 tablespoons, if you are watching your sugar
You can use any milk in the recipe. I have successfully tried with dairy and soy milk.
If you don't have olive oil on hand, you can use canola or any neutral-smelling ones.
You can add chopped nuts especially walnut or pecans would go great, just remember to coat them with a little flour before adding to the final batter
I would recommend not checking the cake before it has domed and not before 25 minutes. You can check if its done with a toothpick, it should be clean except for some cake crumbs that maybe sticking to it, since the cake is moist.
