Useful Notes

  • I have used molasses to make brown sugar from white sugar. You can use light or dark brown sugar or even regular granulated sugar.

  • Feel free to lower the amount of sugar by 2 tablespoons, if you are watching your sugar

  • You can use any milk in the recipe. I have successfully tried with dairy and soy milk.

  • If you don't have olive oil on hand, you can use canola or any neutral-smelling ones.

  • You can add chopped nuts especially walnut or pecans would go great, just remember to coat them with a little flour before adding to the final batter

  • I would recommend not checking the cake before it has domed and not before 25 minutes. You can check if its done with a toothpick, it should be clean except for some cake crumbs that maybe sticking to it, since the cake is moist.

This moist and spicy cake also passes for a healthy grab-n-go breakfast, do give it a try. Feel free to leave any questions about the recipe or baking in comments, I would love to help!
